mhm⦠looks like i definetly must try.
gotta dig aboutā¦
pork is my favourite vegetableā¦
Trust me that would not be legit. I am a Kashmiri and have tried all the so called Kashmiri Cuisine around Europe , middle east and asia and believe me they trick you in believing that you are eating authentic cuisine in the so called authentic masala.
so, to give as a fair chance, come here with the authentic recipe, and we will do our best to reproduce it.
got it, us/europe restaurants are just adaptations, and this is true for various cuisines
we already know that.
and is exactly the purpose of this thread, how to do it properly
plenty recipes are similar across countries/regions etc.
we observed that from the early begining
so we are trying to find out what makes them specific.
sometime is black magic, sometime are forgotten recipes or techniques only the ancestorās know, sometime are certain ingredients. or all togheter.

I would suggest you to pack your bags and fly to Kashmir to eat whatever delicacy you want in the middle of Dal Lake while enjoying the shikara ride.
You would be disappointed to know that I am far far away from eating Kashmiri Cuisine as it has a lot of oil, butter, ghee and what not which I donāt like.
If by ālegitā you mean, ānot authentic as compared to a dish from the originating regionā, of course. But cooking/baking/roasting/grilling is a moving target. I have a favorite set of dishes I like to prepare and cook ā theyāre different every time.
Cooking is like Jazz. Freeform and experimental. Take that away and youāll turn Oscar Peterson into Taylor Swift or worse.
Perfect. ![]()
Not the āWaterā , how would you get that. On a broader level the water used to cook any food plays the major role
Well, I could buy it - but the prices are insane.
I am not taking about sparkling water , LOL. You need the Himalayan water
I believe you believe thatās important. Iām not convinced.
the only purpose for water is to wash. dishes, yourself and so on.
in the stomach, make no sense. this is why we have alcohool.
may be used as a helper in cooking or canning, but here is where the purpose of water stops
avoid it at all costs!
i suppose, here @Monty_Bagati may speak about various brines, or juices or stocks resulting from preliminary procese.
that will make sense and makes a huge difference usually.
we know that and this is why i am asking about genuine recipes, to identify what makes it unique.
i do believe is something thereā¦
so please please please ā¦
recipes, hints, advices from your grandma!
everything!
did some searches.
i suppose we speak about this kashmiri:
but here we need the confirmations from @Monty_Bagati
well, if that document is right, amongs the unique location north-south-east-west, if i am not totally dumb, this location is at a certain altitude (cannot found yet such data, i am still digging)
well, this may bring another interresting aspect.
was briefly discussed, higher the altitude, lower the water boiling point.
which makes me think, the traditional ways of cooking are somehow āslow cookingā⦠due to the laws of physics.
which, indeed, is something.
correct me if i am wrong
Yes , this is the Kashmir, heaven on earth
looks like something i should visit!
It is exactly the same as Switzerland, itās a valley surrounded by mountains.
Must visit
Just look it up and it seems like a fusion between Indian and Pakistanis cuisines? (Since the Jammu and Kashmir region lies between the two, please correct me if I am wrong
). Nevertheless, they look mouth-wateringly good ![]()
Have you ever had Kashmiri dishes before? If yes, then by all means, share your āfood-venturesā here. Meanwhile, Imma go look for a Kashmiri restaurant in my city since I cannot afford to go to Kashmir at the moment ![]()
I was born and raised in Kashmir.
Pakistani cuisine is completely different from Kashmiri Cuisine.
I suggest you to visit Kashmir once and you will be mesmerized by its beauty
if you promise you will visit Romania, i will visit Kashmir.
we have also beautifull lanscapes and amazing dishes.
in the mean time i am still waiting for a genuine Kashmiri recipe from your side.
whatever will be, something you cook, something your granma used to cook.
anything!
