In the preferences page (Mac OS X) of Katalon, I can’t change or add anything.
I added chrome in the second screen shot, but it doesn’t seem to do anything.

You can change the default browser per project, in Project Settings.
In Windows, go to ‘Project’ menu and select ‘Settings’ option. In the window ‘Project Setting’, select ‘Execution’ / ‘Default’, then you can change de default browse fro the dropdown list:
In macOS it should be the same.
